晚上,臺風(fēng)白鴿退去,買了點蔥回到家,準(zhǔn)備開始做我心心念念的雜醬面了。

1.要想節(jié)省時間,可以早早在之前的時間里把肉處理了。五花肉切成哨子(肉末),燒油下鍋翻炒,半熟時可以加點香菇丁,炒熟收工;

2.好,接下來才是重點,煮面。雜醬面的重點還是這個面好不好吃,多數(shù)人推薦用手搟面,但是……手頭上沒有,大部分時候家里都不會有,所以還是老老實實把掛面拎出來,煮水加鹽(一茶勺)等水開。咕嘟嘟的水開了之后,放入一大把面條。BUT,千萬不要攪!我這個廚房入門級自學(xué)成才小天才吃過好幾次沒熟的面才長教訓(xùn)。再次等水開才可以攪動,加大半碗涼水,往復(fù)3次,看著面比較半透明,沒有白心的感覺,差不多就可以撈起來了。此處,注意!建議是加入煮面湯一起盛放,不然會干掉。

3.同時,可以另一個平底鍋攤雞蛋餅,對,就是雞蛋餅,沒有面粉的雞蛋餅。雞蛋餅攤好后,卷起來,切成條。黃瓜洗凈切絲、豆芽的話要燙一下、胡蘿卜切絲切小丁都行要燙、土豆的話應(yīng)該是放到肉里炒的、香腸就好辦煎完雞蛋順便煎一下就OK。

4.最后,準(zhǔn)備雜醬:小火燒油倒入豆瓣醬,小火炒拌翻勻,然后倒入肉醬,慢慢加熱。如果喜歡吃辣椒醬的,可以加入一些辣椒醬。

5.把面從水里撈出,放入大碗,切記是大碗!因為還要加黃瓜絲、豆芽絲、雞蛋絲、一大勺雜醬、燙一下蔥、碎香菜,就可以上桌啦啦啦~~

看著家人把面拌開,再累的辛苦也值得了,可惜這次我自己嘗了一口,發(fā)現(xiàn),沒 ?有 ? 鹽!究竟是哪里出錯了,回顧下發(fā)現(xiàn),豆瓣醬放的太少、煮面條里沒有放鹽,肉里沒有鹽,黃瓜絲、雞蛋絲統(tǒng)統(tǒng)沒有味道……
